I was looking for an easy “bite-to-eat” to offer guests that stopped by in the morning and also for a “grab n’ go” breakfast when I don’t have time to cook up something. I discovered this recipe and added my own touch and the biscuits were a total hit with everyone who tried them. They couldn’t believe they were actually “healthy”. But they are! These biscuits are a must-have in your recipe collection (unless you can’t eat nuts). They are made with almond flour, pecans, and coconut in 3 forms which provide protein, fiber and healthy fats. This helps keep you energized for hours (unlike a refined carb bagel or muffin that is common with the Standard American Diet). They are also naturally-sweetened with maple sugar.
Our culture is so engrained to eat refined carbs for breakfast (as well as pretty much every meal) so I was looking for something to replace the carbs. Even though these actually look like a refined carb we are used to eating (like a scone, pastry, muffin), they are far from it health-wise. The ingredients say it all! They are so easy to make and since they were so delicious, no one even questioned what they were made of. So try these with your family and friends and see how tasty and popular they are! You can replace with different types of nuts or dried fruits to your liking.
Eating healthy fats and protein to start your day off is so important for a healthy metabolism and to sustain our energy. This has been a game changer for me as I converted my first meal of the day to fats and protein. The only carb I eat is in the form of sautéed greens, an unrefined carb. Vegetables are the carbs we want to be eating. By eating refined carbs, especially to start off our day, our insulin gets off to a quick start and the “rollercoaster” begins, as we then battle carb cravings for the rest of the day. Try this idea of replacing refined carbs with healthy fats/protein and see how you feel. Notice the improved energy you will feel and know that it is benefiting your body’s metabolism. You not only will it stabilize your blood sugar but it will also help you lose weight/fat. It may take some time for your body to adjust to metabolizing fats instead of the refined carbs but it is well worth it for our health. Read more in Dr. Mercola’s book, Fat for Fuel.
